Got this old book “Honey” by Janet Bord 1972. Apparently all the following things make up 7% of honey (the rest is sweetness and water)…iron, lime, sulphur, sodium, magnesium, manganese, silica, chlorine, potassium, phosphorous, pollen, aluminium, calcium, copper, dextrine, nitrogen, proteins, amino acids and albumen (whatever that is!) These minerals come directly from the soil, and all of them are essential to our health. The highest mineral content is found in the darker honeys, which sometimes contain four times as much iron as lighter honeys. There are vitamins in honey too, including vitamin C and most of the vitamin B complex. The Vitamin C comes form the pollen in the flowers and is not lost as quickly as it is in the case of fruits and vegetables. This picture is the actual emblem that Dodge put on its V8 Superbee (1968 – 1971)…. So yeah….Honey is kind of like kryptonite
